Catering Manager

We are recruiting for a Catering Unit Manager to join a team based in Hutton near Preston.

The overall purpose of the role is to:

To oversee the planning of seasonal menus, in conjunction with the Catering Services Manager, and overseeing ordering of stock and stock control checks.

Preparation of meals and services at the required times, with agreed methods and portion controls and to the agreed performance and qualitative targets.

To ensure that there is a sufficient hot and cold food option during the service times within the unit.

The areas of accountability include (not exhaustive):

  • To oversee the catering function within the specific catering facility.
  • To plan and design seasonal menus, schedule the recipes, including stock ordering from the appointed supplier keeping with the meal allowance budget as agreed, in conjunction with the Catering Services Manager.
  • Liaise with the Catering Services Manager for stock ordering, ensuring it is with the appointed usage as advised.
  • Preparation of the meals on a daily basis, batch cooking as appropriate to ensure the food is served fresh and held at appropriate temperatures/times to meet food hygiene regulations and ready for serving at the allocated meal service times.
  • Provide guidance and direction to Food Service Assistants undertaking food preparation, start up and close down duties as required
  • Keep accurate records and accounts of food purchases and sales
  • To ensure the highest level of cleanliness and hygiene within the kitchen are maintained and ensure that the cleaning schedule and daily checks are completed and recorded required.
  • To assist in the cleaning of the kitchen area (floors, cookers, storage facilities) and deep clean as and when required

You will have:

Essential:

  • Knowledge and experience of working in a busy kitchen environment
  • Knowledge of current food legislation in regard to food hygiene and health and safety in the workplace
  • Experience in designing and preparing food menus to meet quality, nutrition and cost
  • Ability to read and understand written instruction, health and hygiene notices in relation to food preparation, food storage and service delivery
  • Ability to work maintain and record information clearly and accurately on different media
  • Experience of communicating across a wide of audience using verbal and written skills

Desirable:

  • Food Hygiene and Safety qualification to level 2
  • Experience of using Computerised stock control systems

This is a temporary role, working on a full-time basis for an initial 1 - 2 months with potential for it to be extended, paying £ 12.00 per hour PAYE.
