To support the Chef and deputise the Chef ensuring:

  • That all food not only looks and taste delicious but also reflects the needs of individual's medical and cultural requirements
  • A high-quality catering service is provided, that will enhance the everyday life of the Service User
  • The catering service is carried out in accordance with the Output Specification, appropriate legislation, guidance, procedures and good practice
  • Stock control, budget management and staff rota's

To assist the Chef in the preparation of cooking and service of food within the kitchen's operation, ensuring the provision of a varied, well balanced and nutritional meal to residents, in relation to their individual and medical dietary requirements.

To ensure high levels of cleanliness and hygiene in the kitchen and store rooms

No job description can cover every issue that might arise and the post holder is expected to carry out other duties from time to time, broadly consistent with those listed below.

Key responsibilities:

  • In liaison with the Chef to assist with the organisation and supervision of a high-quality food service
  • Undertake skilled food preparation to provide a variety of meals using seasonal fresh produce following agreed menus
  • Cater for large numbers using various cooking methods ensuring a balanced diet with special attention to individual dietary and medical needs
  • Ensure that portion control of food and beverages are adhered to
  • Assist the Chef in menu planning, budgeting and obtaining feedback from residents to monitor satisfaction of the service
  • Maintain control of hygiene in the kitchen ensuring compliance with current Food Hygiene requirements, Environmental Health and Health and Safety at Work regulations and that staff adhere to food hygiene standards
  • Adhere to stock control procedures as directed by the Chef including rotation of stored foods i.e. frozen, fresh and dry packaged and to ensure proper storage of food
  • Order supplies as directed within budgetary guidelines and to report shortages or unsuitable produce received
  • Ensure the delivery of meals to residents using wheeled heated hot cabinets
  • In liaison with the Chef or when deputising, to oversee the kitchen staff including allocation of duties and training of new staff
  • Assist in planning kitchen operations to ensure that standards are maintained in any staff absence
  • To be flexible in working within agreed rota which may include evening, weekends and Bank Holidays and flexible if required to transfer to another scheme within the Croydon area

Person specification:

Essential Qualifications and Experience:

  • Professional Cookery qualification
  • Extensive catering experience in a commercial kitchen
  • Relevant Food Hygiene Certificate
  • Supportive of a charitable, caring organisations aims and values

Desirable:

  • CIEH Level 3 (or higher) in Food Safety Certificate (or equivalent)
  • Experience of preparing fresh food and multi-cultural cuisine
  • Proven staff management skills
  • Good IT Skills
  • Previous experience of budget control
