Sous Chef

We are looking for a Sous Chef to help the head chef produce high end food for our client, a B&I site near to Bracknell, Berkshire.

As the Sous Chef you will be required to support the head chef in running the kitchen including all sections of retail, deli, main kitchen, Vending, Hospitality, and café.

Hours of work:

7.30am to 16.00pm Monday to Friday [8 hrs per day with 30 min break unpaid]

Sous Chef duties will include:

  • Help the Head Chef create and develop the menu offer with exciting innovation in line with company and ensuring bespoke

client site requirements

  • Ensure that the company's reputation for excellent food and service is enhanced with the client and customers.
  • Control portion size and monitor waste.
  • Help the head Chef carry out weekly stock takes with accuracy and report any issues or shortfalls to Operations Manager
  • Ensure supplies are correctly ordered, used, and accounted for to carry out stock takes and food rotation procedures.
  • Maintain records relating to food production activities and supplier information.
  • Help the Head Chef create interesting and tasty monthly food offers & themes that site associates will rave about and appreciate- all within advised budgets.
  • Ensure Health and Safety and all legal Food Safety Standards are maintained in line with company policy.
  • In the absence of the Head Chef to fully step up to take on all managerial operational functions of the day to day running of the kitchen.
  • Help the Head Chef to ensure critical budget targets and monthly food GP% are achieved as advised by Operations Manager from time to time
  • Maintain EHO current 5* Status food Health & Hygiene

You should:

  • Be enthusiastic around the customer service journey
  • Have smart appearance
  • Have a "can do attitude".
  • Display a real passion for food, knowing current food trends being able to incorporate the same within the business
  • Good secondary education
  • NVQ qualification / Diploma / Degree or equivalent in hospitality
  • Excellent craft skills background
  • Successful progressive background in B&I contract or high street commercial restaurant catering
  • Intermediate Current Food Hygiene Certificate
  • Strong Supervisory experience
  • Ability to display a real passion for food and customer service
  • Strong financial acumen with ability to cost menus, events & functions.
  • Computer literate with Word & Excel software.
