The food offer comprises of working breakfasts, lunch buffets and small plates, canapes and snacks. All food service is ambient. The role responsibilities include: Menu planningOrderingStocktakingEnsuring food is prepared and served to the highest standards.Managing kitchen HSE including allergen management with the support of an on account HSE manager Ideal Candidate Attributes Culinary Broad knowledge and passion for a wide range of food cultures/concepts and experience of creating seasonal, fresh, current, costed dishes. Financial Ensures food is purchased from correct supply chain to maximise GP Manages stocktaking, with the support of the Head Chef, to ensure goods receipting processes are correctly followed and food is stored and prepped to prevent wastage and cross-contamination. Ability to cost dishes and menus and to work with Head Chef to interrogate GP to find ways of driving improvements (portion control, labour etc). Records wastage correctly HSE Comprehensive knowledge and understanding of allergens, food safety and hygiene, health and safety, COSHH, HACCP, RIDDOR and relevant audits, EHO, CSC etc. Is responsible for ensuring the safety of the kitchen and team (training is up to date, equipment is well-maintained, and any faults are reported.
