Head Chef - £5,000 tronc + 30-40% Quarterly Bonus

The role:

Global Talent 2020 are proudly working with our Scottish Restaurant and Bars client for their well established venue in the heart of Edinburgh in recruiting for an ambitious Head Chef to lead and join their exciting Kitchen operations.

The group operate 25+ venues across Scotland and are a well respected hospitality employer.

There is an 100 cover restaurant serving traditional Scottish gastropub cuisine, and space for 80 covers outside in an incredible beer garden. There are two private dining rooms that cater for birthdays, graduations and other family events.

You will manage a team of 10 chefs and have full support from the exec team in developing the food menu and any issues you have at site.

You will be able to influence the food menu and have the freedom to design menus such as canapes, afternoon teas, weekly specials, etc.

The person:

Our passionate, ambitious client at Global Talent 2020, is looking for a real leader in the kitchen, someone who will harness the talent of the brigades, utilise the brand-new fantastic kitchen facilities to their advantage, to provide memorable popular food experiences for its customers, and put the location on the map in the East of Scotland, as a noted place to dine.

The ideal Head Chef candidate must have had prior experience of producing fresh quality food, to a minimum 1 rosette culinary level standard, and had experience of volume restaurants in the high street space. You will need to be highly approachable with your personality, as you will be interacting with other senior department heads, regional management, and with all levels of the site diverse teams.

Our client requires an ideal Head Chef, that is keen to train, coach and mentor their teams, evolve food services, deliver consistent menus and food concepts, and further the reputation of the business as an Employer of choice.

As the Head Chef, you must be proven to be flexible, and highly adaptive in all your approaches to your team, and also with delivery of concepts developed with the company Chef Director, and Regional Head Chef.

As Head Chef, you must also be someone that not only has strong all-round culinary abilities, great presentation skills, possess food innovation skills, but someone that also is an effective manager of the kitchen environment, health, and safety, COSHH, RIDDOR, recruitment, training, and mentoring of others, and possess strong cost & budgetary control skill sets of their area.
