This is a new Restaurant, needing an all rounder for different Cuisine, A Creative Head Chef used to dealing with FRESH food, British food and meze dishes
Head chef will have the opportunity to devise own induction for Kitchen
- Organizes high volumes of work while maintaining a quality product.
- Purchases food quantities, factoring in the number of residents by meal period.
- Monitors and facilitates communication between kitchen production and service staff
- Assures that proper safety, hygiene, and sanitation practices are followed
- Monitors and makes sure staff follows all applicable laws, especially in regards to food safety and sanitation
- Maximizes guest satisfaction by providing the highest food quality consistent with cost control and profitability margins of the kitchen
- Controls and orders all fresh products and dry storage items required by kitchen and related departments to ensure correct quality and par stock
- Develops guest/market-oriented menus, and changes menus regularly to reflect local, seasonal and national trends
- Ability to communicate with staff and residents both verbally and in writing.
- Applies all required cooking techniques based on standard menus.
- Adheres to all corporate purchasing programs.
- Plans for special events and holiday functions.
- Always maintains proper food holding temperatures.
- Takes month-end food inventory and extend totals accurately.
- Reads and understands financial performance and results.
- Accurately observes and defines staff performance issues and provides corrective solutions.
- Always follows company operating standards .
- Maintains all written standards.
10. Meets weekly with General Manager to update department performance
