The role:

Global Talent 2020 are proudly working with one of Scotland's 5 -star luxury Hotels at their stunning, borders situated venue. They are looking for a rising star Head Chef candidate to join their business as Resort Head Chef.

Our client is part of a globally renowned brand, who has a world class reputation for its food quality, well-appointed dining experiences, luxury rooms and class leading hotel leisure facilities.

Set in a beautiful private location, our client is looking for a passionate Resort Head Chef for their quality focused food operations. It is leading a close dedicated Kitchen brigade, producing high end popular food breakfast, lunch, and dinner menus, to a 2 Rosette level standard. This will be across the main restaurant, and bar areas of this established business. There is also a growing C&E element, that will also fall under the remit of this role.

The role is looking for someone to consistently lead the standards to 2 Rosette levels, with delivery of seasonal produce across the business with the team. Working hand in hand with the Culinary Director, utilising both classical, and modern culinary methods to achieve this. Promoting sustainability, and using the best ingredients Scotland has to offer, are key hallmarks of this business's ethos. The GM is looking also for someone to invigorate other food services offered, e.g., Afternoon Teas and build a reputation in the local market for this also.

The person:

Our passionate client at Global Talent 2020, is looking for an experienced Head Chef talent, or advanced Senior Sous Chef looking to step up, who must be approachable at all times, possess a positive out-going friendly personality, and exhibit a "can-do" mentality. Whilst being a strong fair leader to encourage the settled brigade of dedicated chefs.

As Resort Head Chef you will be responsible for the Kitchen budget, Food GP %, stock, rotas, recruitment, Health and Safety, Food Hygiene, COSHH, HACCP, cook safe and all other local, legal, and legislative requirements, as the business requires.

The ideal Resort Head Chef candidate must have had prior experience of working in a quality food led hotel, specifically with 1/2 level rosette experience, or similar. You must be able to demonstrate good all-round classic/modern culinary technical skills, whilst being willing to grow, train and develop the rest of the brigade with this quality organisation.
